That’s what I thought as well. So glad we are on the same page.
When Elliette was little I did lots of research on what the best first foods for babies where and I found that one popular belief among natural food nutritionists is that egg yolks are supreme to any other foods.
Benefits of Egg Yolks for Baby:
Egg yolks are filled with choline, cholesterol and other brain-nourishing substances that are vital for the insulation of the nerves in the brain and entire central nervous system. Since the brain is so dependent on cholesterol, it is especially vital during this time when the brain growth is in hyper-speed (read more about the benefits of egg yolks here).
Benefits of Avocados for Baby:
Avocados, are quite possibly the best food in the world and contain everything a person needs to survive off of (yes, you can repeat that sentence to yourself while you indulge in your third avocado toast of the week;). Besides having a creamy texture that lends itself perfectly to baby purees, they are full of essential monounsaturated fats which babies need in their daily diet to help with proper brain growth.

Ingredients
- 2 hard boiled egg yolks peeled and white parts saved for another use
- 1/4 avocado
- 2 tbsp liquid water, breast milk, formula or stock
Instructions
To make Puree in Blender or Food Processor
- Place the cooked egg yolk and avocado in a blender and puree on low, scrapping down sides until smooth, adding in liquid one tablespoon at a time until you reach your desired consistency.
To make Puree by Hand
- Place the cooked egg yolk and avocado in a small bowl or cutting board and mash with a fork until combined, adding in liquid one tablespoon at a time until you reach your desired consistency. This method makes a slightly more chunkier puree.

We used your ‘recipe’ for boiling an egg and baby James loved it!!
Why can’t this recipe be frozen?
So glad he liked it!!!!
From my experience you can freeze any dish that is made with eggs – quiche, frittatas, etc but when you freeze eggs yolks that have just been mashed down and then frozen they get a little funky when you reheat them. But if you give is a try and it works, please let me know.

Any ideas on how to make this more of a meal than a snack? … my 10-month old does not tolerate anything less than 6oz portions.

lol! That was like my Ellie – 6-8 ounces at a meal!! It would blow people (and myself) away with how much she could eat. Glad your little one is such also a good eater:)
I would only do 1 serving of this puree at a meal and serve it alongside 1 or 2 other purees such as a sweet potato, apple, broccoli, or pear puree. At 10 months old, I would probably stick to 1-2 egg yolks a day if your kids loves them that much.

Love this blog, thank-you so much for all the work you put into it. I wish I had it with baby #1 but baby #2 is thankful too! This puree is awesome as is but I really wanted to make it last. So I added a splash of lemon juice and a little pear puree (because avocado and pear is heaven together!) Happy to report that after freezing and thawing (thawed in the fridge not sure if heating it in microwave would have changed texture. My past experience with microwaves and egg yolks is not pleasant) this puree is still a beautiful light green and great creamy texture. Baby loves it and now it can travel with us!!! But, I think I’ll add a cucumber, which are great sources of fiber – perfect for baby’s digestion. I noticed peeling the cucumber before pureeing made it easier to eat.

Can this be frozen and then defrosted before use?

right now i only have a ninja blender and a ninja chopper. the ninja blender is bigger and heavier than i prefer, have you used the baby nutribullet? or do you have any recommendations for easier equipment used to make the purees?
I got the containers, storage bag, and freezer tray you suggested and i am focusing on this recipe, the roasted banana recipe, and a beef recipe this week.
I have ground bison, which is what we eat. i was planning to use that as my meat in the beef puree with chicken bone broth, any advice on if that isnt a good idea.?

I have not used the baby nutribullet but other readers have said good things about it. I love the idea of using ground bison instead of beef. If you just have ground bison, I would saute it in a skillet until just cooked and then add about 1/3 cup of stock and let simmer on medium-low for 5-10 minutes, adding in more stock if needed. This will hopefully make the bison tender and flavorful. Then puree as directed in the beef or chicken puree recipe card. If you have chunks of bison, I would just cook like the beef puree recipe indicated. Please let me know how this turns out.
Hi! I used ground bison!
I used Built bone broth which is an individual powder packet. So I cooked the meat with a little salt and then I drained any grease. It is lean meat so there isn’t too much to drain. I cooked a pound and use about 1/4 lb to 1/3 lb to make purée.
I made the broth in a separate cup and put both in my ninja chopper actually ha. I help the chopper function down for a couple minutes and put it all into the wee sprouts silicone freezer tray you suggested. She didn’t love it by itself but she would eat it, but next time I will try some additional spice. However, I mix it with the roasted banana purée I made from your site and she eats that down real well. I find that the roasted banana purée has such a good consistency that I use it a lot to mix in with other foods that don’t have such a thick purée. I don’t mind her getting messy but she looses less food while eating when it is thicker so she actually eats more of it. She can down 4 oz of that easier than most other purées. Will continue to use your site and recipes. I have tried some meal sites to see how they are and even if they taste good I feel that I can do the meal prep on my own with your guidance. For now I will continue to use my ninja chopper as it’s easier to keep out and clean. 🙂
