Mary is one of my many friends that is way more on top of it than I am. Unlike me, Mary somehow finds the time to be involved in more mommy groups than days of the week, always has at least three activities an activity planned everyday, she has a vegetable garden to kill for, and she knows how to cook.

I should hate her but really it just makes me love her even more.

Everytime I get to have a playdate with her, I get beyond excited to see what delicious snacks she is going to bring for our toddlers.

And she always brings enough to share. Love her.

When she whipped out a small container of mini mozzarella balls with cut up cherry tomatoes and basil (I’m sure from her garden no less) I was about to pass out. Really? Could it get any cuter. A mini italian capresse snack that the tots went wild for.

Like bees to honey.

Black olives and E became friends a couple of months ago when Mary brought a small container over for her daughter to munch on. E almost pushed her out of the way to get to them [must remember to teach her to not shove other kids] and much to my surprise, she loved them. Couldn’t get enough of them. Was by far her favorite food of the minute. She now will eat an entire can in one sitting, no problem.

And who am I to hold her back from the things she loves in this life.

Tomato + Mozzarella + Olives + Basil Snack

4 tbsp mini mozzarella balls or medium mozzarella balls cut into quarters
3 tbsp organic pitted and sliced black olives
10 organic cherry tomatoes
3-4 organic basil leaves

Drain juice from mozzarella and olive containers and wash in colander. Cut mozzarella if needed. Place on a stack of paper towels and blot to get rid of excess moisture. Put into small bowl. Stack basil leaves and roll into a small tube. Cut small slivers of basil ribbons. Turn and cut in the opposite direction. Put basil into bowl with mozzarella and olives. Wash tomatoes. Cut with bread knife into quarters. Place on a stack of paper towels and blot to get rid of excess moisture. This will help the snack stay fresh longer. Mix in with other ingredients. Toss lightly. This recipe makes one cup. Divide equally into desired containers. Store in fridge. Will stay good for 2-3 days. Share with friends.
