Now that we have your enteratinment covered.  Here is a healthy holiday snack that will keep those little tummies happy.  This snack comes together quickly, so make a batch to keep for those moments you or your little need a sweet holiday pick-me-up.

Ingredients

  • dates
  • raw cashews
  • cashew butter
  • coconut flakes
  • dried cranberries
  • coconut flour

Step by Step Instructions

1. Place dates in small bowl and cover with water.  Allow to soak for 1 hour.  Drain water. If pitted, remove pits (this will be easy to do now).

2. In food processor, pulse raw cashews until the consistency of a chunky flour.  Add dates and pulse until well mixed.  Add cashew butter and pulse until well incorporated.  Soon, it will begin to reach the consistency of a wet dough.  Mix in 1/4 cup coconut flakes and dried cranberries.  Slowly add coconut flour until mixture reaches a desired consistency where it will hold a ball shape when rolled.

3. Using a small cookie dough scoop or spoon, begin to scoop dough and roll into balls by hand.  Place remaining 1/4 cup of coconut flakes into bowl and gently roll balls to cover in “snow”.

Will make 2 dozen 3/4″ snowballs. Will store in air-tight container on counter or fridge for 1 week.

  • 1 – 2 Tablespoons of coconut flour
