The spring weather here in Denver is kinda like living with another toddler.

One day the weather is the nice toddler – all warm and sweet with the sun shining down and nothing but smiles.

The next day the weather is the crazy tantrum toddler – dark and stormy with hours of endless snow or rain falling on all of the happy pink cherry blossoms.


You get accustomed to living with the nice toddler and then all of the sudden the tantrum toddler shows up and you cry a little bit to yourself, because you have already put your snow boots, hats and mittens away. You are completely and utterly over having to bundle up and deal with a melting-down 3 year old.

Look at me and all of my metaphors about toddlers and the weather going on <— which I am pretty sure I lost you about half way through that little rant.

Easy to make, this salad is full of sweet ripe pears, citrusy kiwi, creamy chinks of avocado, chewy edamame all splashed with a little bit of pucker-up lime juice.

Chalk-full of protein, fiber, healthy fats and vitamin C, this finger salad is great served for a starter baby/toddler finger food, in a school lunch, as a healthy snack or even a dinner side for the entire family.

I have served this to the girls almost everyday for the past week. First as a side in Ellie’s school lunch, then as a quick after school snack, then I served it for dinner. For dinner, the girls had it as a side and I had it over some greens topped with grilled chicken and a drizzle of olive oil.

The best part – it’s an all green finger salad and both of the girls devoured every morsel of it 💚💚


Spring-Fling Finger Salad

1/2 ripe pear, cored and diced
1/2 avocado, diced
2 kiwi, peeled and chopped
1/3 cup edamame, if frozen – thawed
1 lime, juiced

Instructions
1. In a small bowl, place the pear, avocado, kiwi and edamame. Squeeze the lime juice over the finger salad and gently mix until everything is coated with lime juice. This will help preserve the color of the pear and avocado.

Yields – 1 1/2 cups or 4 small servings
Storage – will last 2 days in the fridge

Fun Add-ins – You can add in 2 finely chopped mint leaves to this salad for a refreshing taste or sprinkle the entire salad with 1 teaspoon of chia seeds for a little crunch.
