Because I like to follow the cook-once-eat-twice rule, I usually double these recipes anytime I grill so that I can have leftover chicken for later in the week when I need to make a quick chicken salad for my lunch, chicken quesadillas for a park picnic or to simply serve as a high protein snack to the girls (this is seriously Parker’s favorite snack ever!).

Even though this seems like a grown-up meal only, it can easily be customized with whatever vegetable your kiddo likes! We have made chicken in foil packets with 1″ thick corn on the cob, baby potatoes (I like to pre-cook them for 10 minutes before grilling), peppers, asparagus and even zucchini with all good results. Have your kid pick out which veggies they want in their foil packet, write their name on it and then watch them feel super special as you serve it to them. Just a heads up, foil packets get super hot and you do have to let them cool off for 10 minutes after grilling before serving them to your little one.
