This fun Carrot Pasta is a healthy meal (hidden veggies!) for baby or toddler! Great for Stage 2 and 3 Baby Food, served as a finer food, for Baby-Led Weaning or for toddler’s dinner.

Carrot Pasta for Baby + Toddler

There are key times in my daily life where things just break down. This should not take me by surprise as it has been happening for some time now. The first time during the day where things go haywire comes whenever the little one decides to wake up and make her way to her high chair. The second is at 5:30pm [give or take 10 minutes] when she stops whatever fun thing she is doing and makes her way to her highchair.

Then it starts. The melt down.

It’s food time. And she doesn’t care if I am ready with it or not. She wants food and she wants it NOW. And there is nothing that will keep her from losing her mind if she doesn’t get it.

Try as I might to drop little pieces of snacks into her mouth as I am scrambling around the kitchen trying to get something, anything together as she is on a rampage of hunger [trust me, she is never without food, so don’t think I am starving my child] they barley phase her. She wants a meal, scratch that NOW part, she wants it 10 minutes ago.

That is when I came up with this lovely dash. Her hangry breakdown started at 5 one night and even though I do work from home and should have a nutritious dinner simmering away for hours at this point, there was in reality nothing ready. Nothing even planned in my head. I rummaged around the fridge, looked in the pantry and come back out with a big bag of carrots and a bag of cute star pasta that I had been wanting to use for some time.

Peel. Chop. Boil Carrots. Cook the pasta [of course in the same water as the carrots, more nutrients, right?] Dash of tangy Coriander and a quick grating of citrus to balance out the acid in the carrots.

This pasta dish comes together in under 15 minutes [if you can multi task with a toddler screaming on your hip, sometimes I can, sometimes I can’t].

This fun Carrot Pasta is a healthy meal (hidden veggies!) for baby or toddler!

Ingredients 

  • 5 medium carrots, peel and roughly chop
  • 1/2 cup dry star pasta, or whichever shape pasta you prefer
  • 1/2 tsp coriander
  • 1/2 tsp orange zest

Instructions 

  • Fill a medium sauce pan three quarters the way full with water. Bring to a boil. Add the carrots to the water and cook for 6-7 minutes or until you can easily pierce them with a fork. Using a slotted spoon, transfer the carrots to a blender or food processor, leaving water boiling.
  • Pour the dry pasta into the boiling water. Cook pasta for 5-7 minutes. Lighting drain, but do not shake pasta out.
  • Meanwhile, add coriander and orange zest to the carrots and puree for 1-2 minutes or until smooth, adding in addtional water in 1/4 cup increments if needed.
  • Transfer the pasta and carrot puree back to medium pot, stirring until incorporated.

Notes

Age: 6+ months
Yield: roughly 1 1/2 cup of pasta with sauce
Storage: Fridge – store in an airtight container in the fridge for 3-4 days. Freezer – can be frozen for up to 4 months (this and thisare my favorite freezer storage containers).
