I talked about sharing this rather easy-peasy recipe all the way back in December (yikes that is like 1-2-3 months ago) and I have finally gotten around to it. High-five me!!

As I have talked about before, broccoli just isn't my thing. I like the thought of it - a super green vegetable that is full of iron, calcium, vitamin C and folate that can reduce the risks of asthma and cancer and can help boost baby's immune system, but in reality, I just can't get into it. We all have our thing, broccoli no matter how many times I try it, just isn't mine. 

But that doesn't mean that I won't buy it and serve it to my baby. Heck no! I won't let my weird aversion to an awesome vegetable deter my baby from being able to experience and make a judgement for herself on whether she likes it or not. She will probably love it and then hold it over my head for the rest of her life.

To that I say, game on baby!

At first bite, baby Parker gave some rather perplexed looks to this new puree but when served alongside a peach puree and a beet puree, she quickly gobbled it up... like in gobbled up not 1 but 2 servings of this tasty green puree!! Turns out that baby Parker loves her some broccoli puree!

When making baby's first broccoli puree, I wanted to create something fresh and smooth with just the right balance of nutrition and taste - nothing that would overpower her little tastebuds. I started by simply steaming some broccoli florets with a small chopped and peeled white potato. Potatoes sometimes get a bad rap for being dense with carbs but I find that they are not only loaded with vitamin C, folate and potassium they also provide a nice balance to heavy green vegetables. They also make any baby puree extra creamy and fluffy! If you don't want to serve potatoes to baby, you can also use an apple in this recipe. Either one balances out the broccoli and provides a great counter part for this puree. I finished the puree with just a drizzle of yummy and fatty olive oil. Olive oil is a great healthy fat for baby and can be introduced at 6 months of age. Not only does it make the puree taste better but it provides good building blocks for baby's growing brain and bones!

Other great way to serve this puree - 

  • Mix with a serving of chicken puree for baby's first chicken and broccoli meal.

  • Add frozen cubes of broccoli puree into a toddler smoothie with pineapple, almond milk, spinach and an apple (Ellie taste tested this and loved it!).

  • Serve over cooked quinoa for some added protein.

  • Swirl puree into some beet and apple puree for a bright and tasty baby puree combo.

Broccoli + Olive Oil Puree

2 cups broccoli, chopped into small florets. 
1 small white potato, peeled and chopped
1 tablespoon olive oil

Instructions
1. In a medium saucepan, bring 2 inches of water to a boil over medium heat. 
2. Place the broccoli and potato into a steamer basket and place over boiling water. Steam for 12-15 minutes or until the broccoli and potato are tender. Reserve water from steamer. Let cool slightly.
3. Add the broccoli, potato and olive oil into a blender or food processor and puree until smooth, adding water from steamer in 1/4 cup increments if needed.

Adding In Spices
Feel free to add in 1 tsp of chopped chives, 2-3 mint leaves, 1 tsp of chopped cilantro, 1/2 tsp cumin or a squeeze of fresh lemon juice.  

Age: 4 months
Yield: roughly 12 ounces
Prep Time: 5 minutes
