Zucchini, Apple and Kiwi Baby Food with Mint
(((I❤️mint!I❤️mint!I❤️mint!)))
Every spring, mint comes back into my life like a familiar hug. An embrace that feels and tastes so good. I throw it into smoothies, pour hot water over it with a sprinkle of sugar for an afternoon tea, chop it into pestos, toss it into every salad I make and you might even see me nibbling on a leaf as I walk around my kitchen trying to decide what to eat for my second morning snack.
So what better way to introduce baby to the cool refreshing powers of mint, then by serving her this delicious and fun puree combo. While you can use all green ingredients in this puree (green apple, zucchini, kiwi and mint) I won’t consider this a true green puree, I’ll save that title for heavy hitters, such as this, this and this.
But this puree, oh boy does it make for one refreshing and tasty treat for baby’s tastebuds.
It’s like a gentle alarm clock telling baby to get ready for all the amazing produce that is just about to happen.
Get ready baby, it’s almost summertime!

Hello! Getting to know your website was a sure gem! I simply love the combinations and various herbs. Really good for the babies palate.
I tried the recipe but purée turned out quite liquid. Perhaps I added some of the water from the saucepan. Any thoughts on how to thicken it? I served my baby with cottage cheese. She loved it nevertheless!
It might have been from the zucchini, which have a ton of water in them, and maybe yours was just a little more water dense then the one I had. You could add in some additional cooked and pureed apples or serve with thick Greek yogurt.
I am glad she liked it!

My baby FINALLY started being interested in foods so when I found your site, I went a little crazy making up a ton of purees. Luckily I halved this recipe, because for me it made 24 1oz servings. As another reader stated, it was really liquidy. Unfortunately, between the apple and kiwi, it was rather acidic and my 8mo really didn’t like it!! But the great thing about your recipes is, if baby doesn’t like it, they can just be an adult snack for mom! Too bad for you baby, hah!
Oh no! I am bummed this was watery for you as well. Zucchini is hard to make purees with because it’s water content is so high and varies so much from zucchini to zucchini (pears are the same way). Next time you can double the apple and that should thicken it up a little. I am glad you enjoyed it though:)

This makes A TON of puree!
I chopped up the zucchinis and apples and roasted them in the oven. I added a bit of extra virgin olive oil to the zucchini to add some healthy fat to the purée. My little one made a face with the first bit (maybe due to the sourness of the kiwis) but she enjoyed it overall. Either way I would eat it if she didn’t want it!Â
I love that you roasted the zucchini and apples before pureeing. I’m sure it was delicious!
