My family has been sick aaaallllllllllllll month long. Which, no matter how old your kiddos are, is never ever fun😷

So many sleepless nights that lead to cranky days filled with bottom-less cups of coffee. Why someone hasn’t invented a coffee filled IV drip for moms is beyond me – sleepless moms need all the caffeine in the world.

The only two redeeming things about sick days are endless cuddles and a cup of wholesome and delicious homemade chicken noodle soup.

And because we have been sick for weeks on end, I got the opportunity to refine my chicken noodle soup recipe for you #yourwelcome.

My goal was to make an easy chicken noodle soup recipe that both you and baby would want to eat! I’m happy to say that I nailed it!

My entire family loves this recipe!

It’s a simple yet flavorful soup that is full of soft noodles and chunks of tender chicken.

I did not skimp out on the noodles or chicken – to me they are the best part.

The loads of chicken and noodles also make it accessible to both babies and toddlers – because babies and a bowl full of warm broth will never work out well in the end.

👶 For babies and toddlers, I would use a slotted spoon and just serve them the chicken, noodles and veggies.

👧 For older kids, you can start serving the soup along with the broth, but I still go heavy on the chicken and noodles in their bowls.

👩 By the time you get to fill your bowl, why are we always the last ones being served, there is usually just the right ratio of broth to chicken and noodles.

I also add a small amount of turmeric to my soup recipe, call it my secret ingredient 🤐. This flavorful spice helps add a punch of color to the soup as well as an added immunity boost, which is great for sick kiddos and adults.

Since I have reached my quota for typing the words “noodles” and “chicken” in one day, I think my work here is done.

BABY’S FIRST CHICKEN NOODLE SOUP

This Baby’s First Chicken Noodle Soup is a simple and comforting meal for any baby or toddler! Great for ages 9 months and up.

PREP TIME: 2 MINSCOOK TIME: 13 MINSTOTAL TIME: 15 MINS

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1/4 cup onion, chopped
  • 1 clove garlic, minced
  • 1 carrot, peeled and finely chopped
  • 1 celery, finely chopped
  • 1 cup cooked chicken chunks
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 4 cups low-sodium chicken broth
  • 1 1/2 cup uncooked noodles (regular, whole wheat or gluten-free)
  • 1/2 tsp turmeric (optional)

INSTRUCTIONS

  1. In a medium saucepan, add in the oil over medium heat. Add in the onion and garlic and cook for 2-3 minutes or until translucent.
  2. Add in the carrots and celery and cook for 2 more minutes.
  3. Add in the chicken, parsley and thyme and cook for another minute.
  4. Pour in the chicken broth and add in the noodles and turmeric (if using). Adjust heat to high and bring to a boil. Turn down heat to low and simmer for 8-10 minutes or until the pasta is cooked all the way through
  5. Let cool slightly and serve.

NOTES:

Chicken - if you don't have cooked chicken on hand, you can boil 1/3 pound of chicken breasts during step 4 for 10 -12 minutes. Remove chicken from broth and cut or shred before adding back to the soup. 

Turmeric - is great to add to brighten up the soup, but it also adds an immunity boost, which is great for sick kiddos and adults.
